-carotene soybeans will be assessed in the swine model by immunological, histological, physiological, and proteomic assays emphasizing gut response. This project teams faculty of University of Arizona and Purdue University whose expertise encompasses food allergy, seed proteins, carotenoid biotechnology, soybean breeding and transformation, human and animal immunology, and gut/intestinal immunology. The goals of this project directly address program A1341 to improve the function and efficacy of food's bioactive components in promoting health specifically focusing on a major cause of inflammation and gastrointestinal health especially in infants and children.
